Courgette & chocolate cake

​Try this delicious and moist courgette & chocolate cake. And let me know what your family thinks! This is a great way of hiding vegetables!

I actually made it into a game! I offered the cake and then asked: "guess which vegetable is in this cake!" It was fun seeing everybody's reaction when I told them it was courgette! It was surprisingly delicious!

Ingredients (10 portions)

• 80ml olive oil (some extra for greasing the cake tin)
• 100 g sugar
• 2 eggs
• 160 g courgette, grated
• 180 g plain flour
• 2 tsp baking powder
• 2 tsp ground cinnamon
• ¼ tsp fine salt

Chocolate filling

• 1 tbsp butter
• 3 tbsp cocoa powder
• 3 tbsp sugar
• 100 ml of whole milk

 

1. Preheat the oven to 200C. Grease a loaf tin and some flour.
2. In a bowl, mix together the oil, sugar and eggs until smooth. Stir in the grated courgette.
3. In a separate bowl, mix together the flour, baking powder, cinnamon and salt. Tip the dry ingredients into the courgette mixture and stir until just combined.
4. Transfer the batter to the prepared loaf tin.
5. Bake for 45–55 minutes, or until a skewer inserted into the centre of the loaf comes out clean.
6. In the meantime, prepare the chocolate filling by adding all ingredients into a sauce pan, mixing it and let it boil until it reaches desired consistency.
7. Cut the cake into two halves, lengthwise, spread some chocolate filling, add the two parts of cake together, and add some more chocolate on top.
